There is no better feeling than waking up to the sound of rain. Except for maybe that moment you roll over in bed and look outside and you see that it is actually raining - and you don’t have to clock into work later that day. I’ve recently read in an article that checking social media should not take place within the first hour you’re awake. I’m currently failing at this practice.. but, am spending increasingly less time on social media in the morning. Instead of an hour and a half, i’ll skim for 15-20 minutes and call it a day.
Upon jumping out of bed, I normally hit the restroom and get myself together. I then walk into my kitchen and begin the process of figuring out what type of day I want to have, and how i’ll start that day with my breakfast. For example, a blackberry and vanilla bourbon waffle day is very different than an avocado toast type of day. Ya feel?
This morning I whipped up one of my favorite Trader Joe’s recipes. White Bean & Kale Avocado Toast!
I start by toasting two slices of Ezekiel Sesame sprouted grain bread
I then add Avocado’s Number Guacamole To Go packets (all items can be found at TJ’s)
To add some protein, I add Lightlife’s White Bean & Kale Veggie Deli Slices (although these are not unprocessed forms of protein, in the scheme of our American diet and alternative meat options, they’re affordable and incredibly yummy).
I then add some Arugula to make sure we’ve got our greens
And because a meal isn’t finished without being dressed, a few dollops of Trader Joe’s Green Goddess Salad Dressing (avocado, green onion, cold pressed lemon juice, chives, basil & garlic) is the true magic ingredient
This meal is easily under $10 and will keep you satisfied until your afternoon snack.
